Production Notes

Seven Springs Vineyard, overlooking the fertile Willamette Valley from its position in the hills west of Salem, produced the Pinot noir grapes for this wine. The grapes were grown on a steep southeast slope, protected from the maritime winds by a fold in the hills. The vineyard blocks were planted in 1982, 1988, and 1992.

The grapes were fermented in a small tank after three days of cold maceration. The wine aged for 19 months in 50% new Allier new barrels and 50% second fill Cadus Nevers M++ toast barrels, and was bottled without fining or filtration. A small amount of sediment may accumulate during the aging process and is normal for wine produced in this manner.

This Pinot noir complements foods with wild berry, earth, and spice flavors - gamebirds, venison, wild mushrooms - and will benefit from aging up to 12 years.


Winemaker Notes
I produced and miscounted the number of cases of this wine in 1998. I swore that I would not make it again, but after tasting the wine in the same barrels as in 1998, now with their second fill of wine, I realized that the same quality was captured. We will blend two barrels of the original Cadus, Never forest medium++ toast with 2 new Billion Allier barrels and produce 94 cases of 2000 special selection.

The finished wine will actually have less new wood than the regular bottling of Seven Springs. What it will have is more of finesse, texture, and length. Only available as a pre-release, any unsold cases that I don't keep for myself, will go to my favorite restaurants.

Multiple layers of wild back and red fruit, complex pie spice, white and black pepper and, with some age, truffles and farm aromas. Always at its best after 10-12 years. As with the other wines of 2000, the terroir is very transparent.

After this vintage, the upper and lower blocks will be made as separate vineyard designations. The upper will be called Seven Springs and the lower, Anden Vineyard.
