Production Notes

Oregon's cool climate is well suited to the grapes used to produce sparkling wine. Pinot noir and Chardonnay grapes ripen slowly without losing their natural acidity. The wines produced have a balance of flavors and a richness that is enhanced by estended lees aging.

The methode champenoise is a technique developed by French monks and refined by the great French Champagne houses. The sparkle or mousse is created by a second fermentation in this bottle. The wine is then aged for three years to develop flavors and aromas typical vintage sparkling wine before being disgorged.

The 1991 Brut Reserve is a blend of Pinot noir and Chardonnay that was barrel fermented and aged for 16 months on its primary lees. The wine was then put on tirage and aged for an additional 80 months. The dosage is 1% sugar.

The 1991 Brut Reserve is the best sparkling wine we have produced to date. It may be consumed now or aged up to a decade.


Tasting Notes
Pale gold in color. The wine has aromas of baked apples, orange peel, toasted nuts, and cocoa. In your mouth, the wine is very rich with great length and delicacy. A very fine mousse creates a creamy impression in your mouth. Lingering fruit and roasted nuts carry into the finish. An amazing sparkling much more reminicent of vintage Champagne than American sparklers. We released the 1991 Reserve last year for the "millenium" and saved 10 cases for the real millenium celebration. We are offering the 1991 Reserve Brut through the web site. Enjoy.
